KURU İNCİR & KURU ÜZÜM VE CEVİZLİ KEK





  






















DRIED FIGS & RAISINS &WALNUT CAKE

After a long vacation and some health issues, I am back...

Ingredients:
•2 eggs
•1 cup of chopped walnut
•15-20 dried figs
•1 large size apple ( grated )
•1/2 cup of plain yogurt
•1/2 cup of sunflower oil
•1 tbsp of ground cinnamon
•1+1/2 cups all purpose flour
•1/2 cup of whole wheat flour
•1 cup of brown sugar
•1 tsp of baking powder
•1/2 cup of raisins (chopped )



Soak figs in a medium bowl with warm water for 30 minutes. Drain and cut them into cubes.

Preheat the oven to 350F.

Sift flour, cinnamon, salt, and baking powder together in a bowl.

Whisk eggs, granulated sugar in another large mixing bowl until it gets creamy. Gradually add yogurt, sunflower oil whisking consistently.

Add sifted flour, cinnamon, salt, and baking soda to the bowl and whisk thoroughly. Add figs, walnut, raisins and apple to the bowl and stir.

Pour this mixture to a 8" non-stick round cake pan and bake approximately 60 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done.

It is whole, dried Turkish figs. You can find them in most of the Grocery stores in the states.
